Spicy Pickled Chickpeas Recipe

2 (15.5 ounce) cans of chickpeas, rinsed and drained

1 large Hungarian Pepper, thinly sliced and diced, or 1/4 cup Tabasco sauce 

2 tsp. dried dill weed

1 tsp. paprika

1/2 tsp. garlic powder

1/2 tsp. onion powder

1/2 tsp. kosher salt

1 cup water, hot out of the tap

1/2 cup white vinegar

1/2 tsp. sugar

You will also need a 1-quart container with a tight-fitting lid. We used a wide-mouth Ball canning jar.

1 pound ground chuck
1/4 cup olive oil
1 medium onion, diced
1 medium green bell pepper, diced
2 cloves garlic, diced fine
1 large (28 ounce) can tomato sauce
1 small (6 ounce) can tomato paste
1 cup water
1 Tbs. salt
Optional: 1 tsp. dry chili pepper flakes

5 large eggs 

2 cups vegetable oil

½ tsp. dry mustard

1 1/2 tsp. course Kosher salt

2 pinches sugar

1 Tbs. lemon juice

1 Tbs. vinegar

Our family absolutely loves pickled vegetables, but the choices at the store aren't very appetizing, and not very healthy either. We like our food to be as healthy as possible, and most processed food does not qualify, so we created our own pickled vegetable recipe that not only tastes great, but is extremely versatile too. So far we have used cauliflower, carrots, cucumbers and sweet peppers, all of which turned out delicious. We hope you enjoy this recipe as much as we do!
