How To Make Homemade Mayo ~ Easy Recipe

Equipment Needed:

1-quart wide mouth Ball jar

Immersion Blender


5 large eggs 

2 cups vegetable oil

½ tsp. dry mustard

1 1/2 tsp. course Kosher salt

2 pinches sugar

1 Tbs. lemon juice

1 Tbs. vinegar


1) Crack 3 of the eggs into the jar. Separate yolk from white in remaining 2 eggs and add only the yolks to the jar. Add dry mustard, salt, sugar, lemon juice, and vinegar. Pour oil into jar. Let this combination sit long enough for the eggs to settle down and rest on the bottom of the jar completely underneath the oil. 

2) Insert immersion blender, pushing it all the way down to the bottom of the jar. Click on the power button (high setting) but don't move the blender for a full 20 seconds. Almost instantly you will begin to see emulsification start to transform the oil and eggs into mayo. After about 20 seconds, the mayo will be almost all the way to the top.

3) Now start slowly raising the blender until you get to the very top of the mayo. Do not take the stick completely out or mayo will fly all over! Continue blending for just a few more seconds. At this point, you can move your stick blender around to be sure all of the oil is completely blended in.

4) Screw the lid onto the jar and store in refrigerator.

We bought it approximately 4 years ago and it has held up beautifully under what I consider pretty heavy use. I also have a separate one that I use for my soap making, and it’s still going strong too! We have tried other brands, but they burned up after just a few months.
